Jei apie alų žinotume tik iš liaudies dainų,
manytume, kad jis yra labai saldus. Tautosaka
būtent saldumą iškelia kaip svarbiausią
šio gėrimo savybę. Tačiau, mes juk žinome,
kad esama ir kartaus alaus. O pats saldumo ir
kartumo santykis jame būna skirtingas.
Saldumas taip pat gali būti ir ne skonio, o
žmogaus būdo ar kokio kito jausmo išraiška,
paprastai suvokiama kaip jungianti, artinanti,
maloni, kai kartumas atvirkščiai – nutolininanti,
atskirianti, nemaloni. Tačiau, nors
ir mėgstama kartumą sieti su neigiamomis
reikšmėmis, jis aludarystėje yra ypatingo
skonio požymis – ,,be apynių puškelių alus
niekam tinkamas. Puškeliuose visas kartumas”.
Ir vis dėlto dažniausiai jis aluje nėra
vyraujanti savybė, o greičiau saldumą atsveriantis
skonis. Todėl seniau valstiečiams
susinešus vaišes atšvęsti darbų pabaigtuves,
šviežio alaus kaštavojimas ir jo aptarinėjimas
buvo mėgiama veikla. Sambaris prisiragavus
gardaus gėrimo įsisiūbuodavo, prasidėdavo
ginčai, varžytuvės ir jame tvirtėdavo
bendruomenės saitai. ,,Oi ką kalba apynėlis,
mūsų visų gėrime?“ Be apynių nebus sambarių
ir gero alaus!

If the only knowledge we had of beer came
from folk songs, you’d think that beer is very
sweet. According to folklore, namely sweetness
is highlighted as the major characteristic
of this drink. Yet we are well-aware of the fact
that it can also be bitter, not to mention the vast
varieties combining different ratios of sweet
and bitter too.
Sweetness can also refer to not only flavour,
but also someone’s character or a feeling, usually
perceived as connecting, bringing you closer,
and pleasant, leaving bitterness in the opposite
as distancing, dividing, and unpleasant. Yet
although bitterness often carries a negative
meaning, it’s a whole different story in brewing,
saying (and singing!) things like ‘beer without
hop cones is useless, it’s the hop cones that bring
out the bitterness’. Nevertheless, it’s not the
dominant feature in beer, but rather a flavour
to balance the sweetness. Thus, in the old days,
farmers bringing together a feast to celebrate
the end of the farming season, would take pleasure
in tasting and discussing fresh beer. The
feast would soon take momentum with disputes,
contests and strengthening community
ties. ‘What does the hop cone say in our drink?’
No hops – no feast and no good beer!
